Cuvée Esprit

Our Esprit cuvée is made from 100% oak barrels on lees. This means that once the fermentation has been carried out in a refrigerated stainless steel tank, the wine is entered directly into the barrels, without being filtered to separate the wine from the grapes, which creates the lees. Also, our 3 grape varieties are raised separately because all have various specificities. Aging is more or less long depending on the aromas and qualities sought.

For example, our 2013 Spirit comes from an 18-month barrel aging, while our 2015 Spirit comes from a 60-month aging, while our 2016 Spirit comes from a 48-month aging. Contrary to popular belief, just because a wine stays in barrels for a long time does not mean that it will take on the taste of "wood". The barrel brings roundness, tannin, more intense aromas as well as a certain power.

Thus, we produced AOC Côtes du Rhône wines that were difficult to imitate from a quality / work / sales price point of view.
